Many raw food companies create their own version of raw chocolate candies – bars, truffles, you name it - in order to enjoy the health benefits of unheated cacao (chocolate in its raw form), but their chocolates were always a tad chewy, a little grainy, and frankly, just not a legitimate replacement for the worlds’ fine chocolate. Pure Food and Wine’s Executive Pastry Chef, Jana Keith-Jennings, has created a process to work with raw chocolate in the same way that any Chocolatier does – by tempering it for that crisp, smooth texture – while refraining from putting the cacao through a heating process, thus maintaining the vital nutrients and antioxidants (raw cacao has 4 to 7 times the amount of antioxidants than traditional dark chocolate) that make cacao one of the worlds most notorious superfoods. In addition to the higher level of antioxidants, when eaten in the raw form, cacao is an excellent source of serotonin, dopamine, anandamide and phenylethylamine (PEA), four well-studied neurotransmitters, which are associated with feelings of well being and help alleviate depression. These nuerotransmitters are present in raw cacao in large enough quantities to affect the brain and lift our moods, hence raw chocolate’s association with happiness and bliss.
